Coconut panko fried prawn tacos with mango and avocado salsa 🌮

Missed taco Tuesday so making taco Thursdays a thing 🤷🏼‍♀️

Panko Prawns 🍤
• For 4 people you will need two packs of raw prawns (a pack is usually 180g for reference)
• In 3 bowls, separate out 4 tbsp plain flour in one, 2 eggs (whisked) in the second and 60g Panko breadcrumbs with 2 tbsp desiccated coconut in the final bowl.
• Now, individually coat each prawn, dipping in flour, then egg then breadcrumbs and placing each to the side until all prawns are breadcrumbed.
• Cook prawns for around 10 mins in a hot pan with 2 tbsp coconut oil until golden brown and cooked through.

Mango Salsa 🥭
• In a large mixing bowl, combine 1 fresh mango (cubed), 2 avocados (cubed), 1 red chilli (finely chopped), around 10-15 cherry tomatoes (halved) and 1/4 cucumber (sliced).
• To make the dressing, in a small bowl, mix 1 tsp fish sauce, 1 tsp soft brown sugar and juice of 1 fresh lime. Stir in the dressing and chill salsa in fridge until ready to eat.

Stuff prawns and salsa in soft white taco wraps (or crisp these up in oven which we often do)! Serve with soured cream, gem lettuce, finely sliced radish and a wedge of lime 🥰
