Eton Mess Cheesecake 🍓
Felt like a dessert was well overdue on the grid! With summer coming to an end I decided to make a summery cheesecake over the weekend before the rain decided to show up ☔️

Combine 200g crushed digestive biscuits with 100g melted butter in a large mixing bowl. Add to the base of a lined spring form cake tin and press to create a firm layer. Leave in the fridge for 1 hour to set.
Using an electric whisk for best results, beat 300g mascarpone with 400g full fat cream cheese, 150g icing sugar and 1 tsp vanilla essence. Slowly pour in 200ml double cream and continue to whisk until smooth then spoon the filling onto the biscuit base. Finally, smooth the top as desired and leave in fridge overnight.
In preparation to decorate you will need approx 400g strawberries (halved and quartered as desired), balsamic vinegar, 2 x passion fruit, and meringue nests.
Firstly, arrange strawberries around outer edge of cheesecake, place 1 x meringue nest in the centre and crumble further meringue over the rest of the cheesecake. Next, create a strawberry balsamic glaze by combining a large handful of strawberries, 1 tsp balsamic vinegar, 1/2 tsp vanilla essence and 100ml water in a blender. Finally, scoop out contents of the passion fruit and drizzle all over along with the strawberry glaze. Garnish with marksandspencerfoodpr edible flowers and enjoy 🥰
