Sausage and Goats Cheese Salad 🥗
With the colder months approaching, this is definitely my go to winter salad 😍 If you fancy something lighter than a roast on a Sunday this is also a great option!
Recipe below ✨ This makes enough for 3-4 people but will also keep in the fridge for a couple of days!
British pork sausages x 6
Large bag of mixed salad leaves
Extra spinach (small bag)
Fruity couscous (optional)
Mixed olives (handful)
White quinoa 100g
Red quinoa 100g
Goats cheese 120g
Mixed peppers x 3
Red onion x 1
Olive oil 3 tbsp
Red wine vinegar 1 tbsp
Black olive tapenade 1 tbsp
Salt and pepper to season
Grill or oven cook the sausages as per preference until browned. Whilst sausages are cooking, slice peppers and red onion then place in an oven proof dish with a drizzle of olive oil. Place in pre-heated oven and roast veg for approximately 20 mins or until softened.
Prepare the white and red quinoa as per packet instructions and arrange at base large salad bowl, allowing to cool slightly before adding ing layers.
When sausages are done, leave to cool for at least 5 mins before slicing diagonally. Remove peppers/ onion from oven and also leave to cool on the side for a little while.
Place goats cheese briefly under the grill and heat until the centre is gooey.
You can now arrange your salad as you like! I have quinoa as my base then add some leaves, olives, roasted peppers, roasted red onion, couscous, crumbled goats cheese and half of the sausage pieces before repeating and topping with pomegranate.
Finally, combine the dressing components, drizzle all over and serve salad whilst still warm 🥰
